This Salmon Dinner is incredibly flavorful and unbelievably simple to prepare. You’ll hardly believe it’s as healthy as it is delicious!

If you’re in a hurry to prepare a healthy dinner for your family or just yourself, this salmon dinner dish is an excellent choice. Be sure to thaw the salmon in the refrigerator the night before to save time. Begin by roasting the vegetables, then add the salmon to the oven after the veggies have been roasting for about 25 minutes. This way, everything will be ready at the same time. Salmon fillets similar in size to the ones shown here take about 12 minutes to bake at 400°F. The roasted vegetables will take approximately 45 minutes, depending on your preferred level of doneness. I made this for my family, and they enjoyed every bite!

  • 1-2 bags of small roasting potatoes
  • 1 large onion
  • Around 6 large carrots
  • Olive Oil
  • Garlic Salt Seasoning
  • Salmon Filets (however many you wish to cook)

Feel free to swap in different vegetables for roasting if you don’t have the ones listed here. The cooking method will stay pretty much the same no matter which vegetables you choose. Options like zucchini, squash, peppers, asparagus, or similar will work beautifully. If you’re out of olive oil, other oils can be used as well—though I’d probably skip coconut oil for this particular recipe. If you decide to try it, let me know how it turns out in the comments! I love hearing your creative takes on my recipes and the results you get. Personally, I like using sweet onion for this dish, but yellow or white onions would be great alternatives too.

Food Prep

Preheat your oven to 400°F. Start by thoroughly washing the potatoes and carrots. Peel the outer skin of the carrots, then chop them in half. If one end of a carrot is particularly wide, slice it lengthwise to ensure even cooking. For the salmon, thaw it in the refrigerator overnight and rinse it before use. Once thawed, lightly coat the salmon with oil and season it to taste.

Chop the onion into large pieces. When all the vegetables are prepped, arrange them on a large, foil-lined cookie sheet. Brush the vegetables with olive oil, ensuring they are evenly coated, and sprinkle with garlic salt for flavor. Place the prepared vegetables in the oven once preheated, roasting them for about 45 minutes, or until they are cooked to your preference. Set a timer for 25 minutes to mark the halfway point.

While the vegetables are roasting, prepare the salmon. Place it on a foil-lined pan, brush it with olive oil, and season with garlic salt. Once the 25-minute timer goes off, add the salmon to the oven. If the salmon pieces are small, they will typically cook in about 12 minutes at 400°F. For larger, thicker pieces, allow additional time and use a meat thermometer to check doneness. The USDA recommends cooking salmon to an internal temperature of 145°F in the thickest part, but many chefs prefer to remove it at 130°F for a softer texture. Fully cooked salmon will appear white-pink and flake easily with a fork.

Ingredients
  

  • 1-2 bags Small roasting potatoes
  • 1 ea Large onion
  • 6 ea Large carrots
  • 4 tbsp Olive Oil
  • 4 tbsp Garlic Salt Seasoning
  • 4 ea Salmon Filets however many you wish to cook

Instructions
 

  • Pre heat oven to 400 degrees
  • Line large cookie sheets with foil
  • Rinse potatoes and carrots clean
  • Peel carrots and cut to make them equal sizes
  • Cut onion into large pieces
  • Put all of the vegetables into one of the pans together
  • Add olive oil into a cup and brush it all over the vegetables
  • Sprinkle vegetables with garlic salt seasoning
  • Put the vegetables into the preheated oven and cook for 45 minutes or more if needed to your liking
  • Set a 25 minute time as soon as you put the vegetables into the oven, when this timer goes off then you will put the salmon into the oven
  • Before the 25-minute timer goes off, prep the fish by rinsing it
  • Spread olive oil on the fish and sprinkle with the garlic salt
  • Once the timer goes off, put the fish into the oven and cook it until it reaches 145 degrees with a meat thermomente. Some prefer it to come out of the oven at 130 degrees- It will look light pink with white stuff on it when it is done. It will also be flaky.

Notes

Be sure to thaw the fish in the refrigerator the night before so that it will cook properly.
