This Pasta Casserole is Yummy and So Easy to Make!
This pasta casserole dish is a reimagined version of my mother’s classic recipe. She affectionately called it the “LBC” or “Lazy B…h Casserole,” a go-to meal for those busy nights or when cooking felt like a chore. Her original recipe featured Velveeta shells, fried Spam, and peas—a simple, comforting dish that quickly became a family favorite.
In my updated version, I’ve added a fresh twist with homemade cheese sauce, baked turkey bacon, organic gluten-free pasta, and frozen peas. One of the best things about this recipe is its versatility—it’s perfect for using up ingredients you already have on hand. Feel free to experiment and make it your own, and let me know in the comments what creative combinations you come up with!
