Make Your Leftover Mashed Potatoes into a Delicious and Easy Dinner with this Recipe.

Mashed Potatoes the Night Before

When I have leftover mashed potatoes, this quick dinner recipe is my go-to. Making extra mashed potatoes initially is handy for preparing this easy soup the following day. I prefer using white or yellow potatoes, though any variety works. I wash, peel, and cut the potatoes into uniform chunks, boiling them for about 25-30 minutes. Afterward, I strain them and add them into a mixing bowl. I add 1/4 cup of milk, 3-4 tablespoons of butter, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 1.5 teaspoons of garlic powder, and 1 tablespoon of dried green onions. Then, I blend everything into a creamy, slightly lumpy mixture. I typically use half a bag of potatoes to yield a large bowl of mashed potatoes.

Soup Time- So Easy and Yummy!

The following day, I take the leftover mashed potatoes and place them in a large pot, adding some milk. You can choose any type of milk you like, but I prefer using whole milk for my soup. I pour just enough milk to cover the potatoes with a bit extra. Refer to the photo below. With the stove set to medium heat, I season the mixture for enhanced flavor. I incorporate 1.5 teaspoons of garlic salt, a teaspoon of black pepper, a tablespoon of dried thyme, and 1.5 teaspoons of garlic powder. Once the seasonings are fully blended into the soup, I bring it to a boil and then reduce the heat to low, allowing it to simmer for about 10 minutes.

At this point, the soup is ready. I sprinkle dried green onion on top as a garnish. Grilled cheese sandwiches complement this soup perfectly. I melt butter in the pan, using butter bread and whatever cheese is available to make the sandwich.

Ingredients
  

  • 3 cups leftover mashed potatoes
  • 2-4 cups milk
  • 1 tbsp dried green onions
  • 1.5 tsp garlic salt
  • 1.5 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tbsp dried thyme

Instructions
 

  • Pull out your leftover mashed potatoes and add them to the large pot
  • Add your milk to make sure it covers the mashed potatoes well
  • Add your seasonings and mix with a spoon well
  • Turn on the stove eye to medium and bring to a boil
  • After it is boiling, turn to low and let simmer while stirring for 10 minutes
  • Add to a bowl and sprinkle some dried green onion on top for garnish
  • Make a grilled cheese to go with it because they are a great combo
  • Enjoy!
